A relative of sorts recently pawned off on me a massive box of god-awful misshapen carrots. Plenty of carrot cake or whatever for the next few weeks or so, but what do I do with the rest to save them over the winter?

Also 2 more boxes of tomatillos, which I have no idea what to do with.
The carrots should last quite awhile in your fridge, I stick mine in one of the produce drawers. I find they keep longer than anything else, at worst they will wilt a little bit, but if you cut them up and stick them in some water for a while they usually crisp right up, although they tend to get a bit curly if they were really dried out.
They almost never rot, and when they do it is because something above them went south and the nasty rot-juice got on the carrots and got them going. If kept cool and dry I bet you could keep them in the fridge for a year?
As for the
tomatillos, go buy some onions, limes, cilantro, and green peppers (mild-spicy depending on your taste) and make
Salsa Verde out of them.
There's tons of
Salsa Verde recipes out there: cooked and raw-grind. Mine is a cooked recipe, I can dig it out for you if you like? Otherwise just use your favorite search engine and look for some recipes. It is pretty basic, I have found that it freezes pretty well if you end up making a ton of it. Pro-tip: if you are freezing it do so in 1/2 or 1 cup containers.
I think it keeps for a week or so in the fridge before it starts to ferment... I have never tried canning it, but I imagine that is a possibility as well.
